A Valentine's Treat...

This recipe is the perfect treat for your valentine, and a delightful dessert which we serve here at our restaurant and hotel in Suffolk. Smooth, dark, rich and utterly delicious!
Dark Chocolate and Salted Peanut Delice with Boozy Cherries

THE BASE

80g crushed peanuts
70g sugar
10g corn flour
10g plain flour
80g butter
2 eggs

1. mix the cream, butter and sugar together until light and fluffy
2. add eggs
3. fold in flours and peanuts
4. spread thinly on lined tray and bake for 6 minutes until spongy texture
5. cut out discs bigger enough for the moulds you will use for the delice
6. place a disc in bottom of each mould

THE DELICE

140ml milk
2 eggs
325ml double cream
680g chocolate (70% cocoa solids)

1. Bring double cream and milk to a boil
2. Pour this gently over whisked eggs
3. Add chocolate and stir until you have a smooth, shiny ganache
4. Pour into moulds and place in fridge to set

WHITE CHOCOLATE AND PEANUT TOPPING

165ml double cream
170white choc
100g peanut butter
1 egg
2 pinches salt

1. Place all ingredients in a heatproof bowl and melt together over a pan of simmering water,
2. Mix until smooth, don’t cook it or boil it as eggs will start to scramble
3. Let it cool down a little and glaze the tops of the delice and then sprinkle with some chopped roasted peanuts(optional)

CHERRIES

1kg cherries
1litre Eau de vie or Vodka
300g sugar
Sterilised jars

1. Rinse the cherries well
2. Cut of the stalks leaving 1cm still on the cherry, that way the brandy will keep longer as the cherries stay nice and firm.
3. Layer the cherries with the sugar
4. Pour over the alcohol and close the jar
5. Put in a dark place at room temperature and shake every day for a week

Here at our restaurant in Suffolk, I serve this with a cherry gel, salted peanut tuille and expresso ice cream. I hope you and your loved one enjoy this romantic recipe, it's sure to impress!
